Cool. I'm surprised "Virginia is for Lovers" didn't make the list.....however, you can get pretty much any custom vanity plate nowadays. In NC we have no less than like 100 or so custom backgrounds to chose from. University logos, armed forces, save the turtles/bees/bears/etc, you get the idea...

Blend doors will self calibrate once the engine is shut off, usually goes on for a few minutes, not hours. if yours are trying to calibrate for hours, sounds like one or more of the blend doors is experiencing a malfunction which is preventing it from completing the calibration routine.

09's have a recall for door wiring harness. Has the recall been done?

There are caps on the ends that pry off. Bolts holding to the roof are underneath.

They need a different vehicle.

Read your owners manual. Wait for the indicator to come on but don't exceed 12 months or 10,000 miles. The dealer is flat out wrong and is trying to sell you unneeded services. Trust the manufacturer recommendations. I'd be telling that dealer to take a hike if they lied to me like that.

Yes, Burn it down with fire.

The AC will come on automatically based on humidity levels in the cabin. Even if turned off in the manual mode, the AC system will remain active to prevent fogging. This is normal and explained in your owners manual.
